Here in Portland, executive chef William Hussey carries on the Trader's tradition by melding local ingredients with cooking methods and exotic spices from the South Seas, Asia, Europe and beyond.

Our custom-built Chinese wood-fired oven roasts meat, poultry and seafood to perfection and infuses the distinctive smoky-sweet flavor that defines Trader Vic's dishes. It is also a healthy form of cooking that's endorsed by the American Heart Association.
